Yields: 5-6 Servings


  • 1 yellow squash
  • 1 carrot (grated)
  • 1 beet (grated)
  • 1 tomato (sliced)
  • 1 small cucumber (sliced)
  • 1-2 handful of spinach/lettuce leaves


  1. For the ketchup, blend up all ingredients until smooth and creamy. (ingredients see bellow)
  2. Use a mandolin to cut your squash into slices. Then start layering your burger. Begin with a squash slice as a bun, add a spinach leaf, grated carrots & beets, a little bit of ketchup, cucumber & tomato slices, more ketchup, another spinach leaf and top it off with another squash slice.
  3. Let’s get messy and take a bite!
  4. Ketchup ingredients: 8 cherry tomatoes, 5 slices of soaked sundried tomatoes (saltfree), 1 date
