Yields: 1 Batch


  • 10 pitted Medjool Dates
  • 1 tbsp almonds
  • 1-2 tbsp carob powder
  • 1/4 tsp lemon zest
  • 1/4 tsp orange zest
  • 1 pinch of vanilla powder
  • 1 pinch of gingerbread spice
  • a few goji berries for the decoration


  1. Add all ingredients into the food processor and process until it looks like a sticky cake batter.
  2. Take your dough out of the blender, shape it into a roll and cut it into thick slices. Roll the slices inbetween your hands into truffle balls and decorate it with goji berries. And if you want you can also roll out your dough and cut out little gingerbread men.
