Yields: 8-10 Cupcakes


  • 1 cup of dates (pitted)
  • 1/2 cup of coconut flour
  • 1 tbsp carob powder
  • 1 tsp of vanilla powder
  • 1 cup of cashews
  • 1 tbsp of barleygrass juice powder/green powder
  • 1 lemon/lime (juice)
  • barberries


  1. For the cupcake base add coconut flour, carob powder, dates and a little bit of the vanilla powder into the blender or food processor and process it until it has a crumbly, dough like consistency.
  2. For the topping blend up lemon juice, vanilla powder and cashews with about 1/2 of a cup of water. Divide the cream into two bowl and stir the green powder in one bowl. (You can color your second bowl with your favorite Color e.g. raspberry juice or carob powder and keep it for another batch of cupcakes).
  3. Now take off 1-2 tbsp of the base dough, roll it inbetween your hands and press it flat. Set the dough balls on a plate.
  4. Fill the green cashew cream into a piping bag and pipe it onto the cupcake bases.
  5. Then it’s time to decorate your christmas trees with some red barberry ornaments.
  6. Tada! The Christmas trees are set up and ready to be served!
