These cupcakes are so cute that they’re almost too pretty to eat!
Ingredients
Base
- 1 cup strained defrosted sweet or sour cherries
- 1/2 cup of pitted dates
- 1/2 cup of ground tiger nuts
Frosting
- 1 cup soaked blanched almonds
- 1/2 cup of orange juice
- 1/2 cup of pitted dates
- 1 tsp orange zest
- 1 tsp vanilla powder
Filling
Directions
- Blend up strained cherries and dates until smooth, then add in the tiger nut flour and process until well combines.
- Take out 1-2 teaspoons of the cherry base and roll it in between your hands into a ball. Press it into a cupcake mould and use the back of a wooden spoon to punch a hole into the middle.
- Fill the hole with cherry jam.
- For the frosting blend up all ingredients until smooth and creamy. Fill it into a piping bag and pipe the frosting on top of your mini cupcakes.
- As a final touch sprinkle some cinnamon powder on top.
