These cupcakes are so cute that they’re almost too pretty to eat!

Ingredients

Base

  • 1 cup strained defrosted sweet or sour cherries
  • 1/2 cup of pitted dates
  • 1/2 cup of ground tiger nuts

 

Frosting

  • 1 cup soaked blanched almonds
  • 1/2 cup of orange juice
  • 1/2 cup of pitted dates
  • 1 tsp orange zest
  • 1 tsp vanilla powder

 

Filling

Directions

  1. Blend up strained cherries and dates until smooth, then add in the tiger nut flour and process until well combines.
  2. Take out 1-2 teaspoons of the cherry base and roll it in between your hands into a ball. Press it into a cupcake mould and use the back of a wooden spoon to punch a hole into the middle.
  3. Fill the hole with cherry jam.
  4. For the frosting blend up all ingredients until smooth and creamy. Fill it into a piping bag and pipe the frosting on top of your mini cupcakes.
  5. As a final touch sprinkle some cinnamon powder on top.
  6. Soooo good!
