Did you know that broccoli is one of the top calcium sources besides kale and other greens? YES! And besides that it also has a lot of vitamin A, C, zink, iron, antioxidants and zero cholesterol.
Milk on the other hand is not a very great calcium source as it is an acid forming food to your body. And when you eat acid forming foods your body uses calcium and magnesium to get back to an alkaline balance. So instead of absorbing calcium your body is actually flushing out calcium from your bones and teeth. Even if we do absorb a little bit of the calcium from milk, it’s not enough. The point is, it’s not about the amount of calcium that you eat but rather about the quality of it.
This calcium and protein rich salad will sure boost your health with lots of bioavailable calcium and provides you with valuable vitamins and minerals as well.
Ingredients
- 1 head of broccoli
- 2-3 stalks of celery
- 1 tbsp of dried cranberries
- 1 tsp of sunflower seeds
Curry Dip
- 1 peeled zucchini
- 1 tangerine, juiced
- 1 tsp of lucuma powder
- 1 dash of curry powder
Directions
- Cut the broccoli florets off the stem and add them into a bowl. Chop up the celery stalks and add them too.
- Toss it with dried cranberries and sunflower seeds.
- For the dip/sauce blend up all ingredients until creamy, pour it over the broccoli salad and toss to combine or serve it on the side.
Tipp: This dish is also a great snack on the go, as you can prep the salad and the dip, fill it into jars and combine it whenever you’re ready.
